Topping the list of my crazy food ideas today, I present to you, cheese on ‘toast’. What’s special about that I hear you ask? Well, the ‘bread’ is actually a tin of tuna blended with an egg & a bit of baking powder, microwaved then toasted… witchcraft
*Tastes neither overly fishy or eggy. Can also use cooked chicken but I had none. Think tuna melt panini*
1 tin tuna (well drained)
1/2 tspn baking powder
Can add herbs / garlic powder etc but I got giddy & forgot
Microwave 4 mins
Tip out, cool slightly, slice in two
Toast both sides
1. Smoked salmon and asparagus tortellini pasta

My midnight snack! Made with my own bare hands! No takeaway rubbish for me! Cheese, pepperoni, spinach, ricotta, mushroom and baked bean pizza! You’re all so jealous of this masterpiece of culinary perfection aren’t you?
Someone actually saw this delicacy and wrote: “Looks like you went out on the lash last night, came back, puked up your beans on toast you had for lunch that day on top of the pizza you were about to cook, placed it in the oven and then ate it.”

Please tell me I’m not the only one who makes cheese on toast like this, lashings of marmite grated Cathedral city cheese with a dusting of paprika.

Taiwanese cold chilli chicken noodles (all the sauce is hiding at the bottom of the bowl soz)
5. Pasta with a tomato sauce
Pasta with a tomato sauce made from fresh garden tomatoes and peppers, zucchini and mushrooms sauteed on the side and tossed in at the last second. California Chevre stirred into the sauce and fresh Parmesan grated on top. Served with a local Merlot in a margarita glass from the dollar store.
Moving to Russia, so I thought I’d have a go at making Borscht… Think I need a bigger pot
